Merry Christmas
Because I don’t plan to spend a whole lot of time online over the next 48 hours I wanted to wish everyone I know a very merry Christmas. I love this time of year, but it is also a time that I remember some of those that are no longer with us and this year I’ve got fresh memories in that area. Weird to realize that this is the first Christmas that I’ll have no Grandparents. Strange, strange, strange.
I’m making a big Prime Rib dinner tonight. First time I’ve ever made it and the in-laws will be here. If I mess it up, I’ll never hear the end of it. Plus, it is the most expensive hunk of meat I’ve ever bought so it better be good!
I can’t wait for tomorrow morning. Always a time of magic and imagination.
Merry Christmas!

Merry Christmas right back at you. I almost went for the prime rib tonight, but decided at the butcher shop this morning to do black and white tenderloins (one beef, one pork). If you cook the prime rib low and slow (if your oven goes low enough) you can keep it ready forever. The challenge is guessing how long it will take to get up to rare (since I assume you won’t be overcooking such a beautiful piece of meat!).
Best of luck with the cooking. Hopefully we’ll both make it through our amateur chefdom tonight!
