Porcupine Burger Recipe
I mentioned tonight on Twitter that I was making “porcupine burgers” for dinner and got more then one curious response and several requests for the recipe so I figured I’d post it here. This was a Chapman staple growing up. It was cheap, one pot and easy to make and have left overs from. Grab a pressure cooker and give it a try.
Chapman Porcupine Burgers (8 servings)
2 lbs Ground Beef- 1 cup Uncooked White Rice
- 2 T Minced Onions
- 2 T Salt
- 1/2 T Black Pepper
- 2 10 1/2 oz. cans Tomato Soup
- 1 1/4 Cup Water
Instructions:
- Combine meat, rice, onion, salt & pepper in a bowl and mix with hands
- Form into balls (ours end up about the size of a tangerine)
- Mix soup + water in a pressure cooker
- Place meat balls in the cooker
- Cover and cook on high until the control starts to jiggle
- Reduce heat and cook for 10 minutes
- Remove from heat and let stand for 5 minutes, then remove pressure in the sink with cold water.
- Cut meatballs in to pieces on top of a peace of plain white bread and cover with sauce
- Enjoy!

Porcupines abound. I watched “Tortilla Soup” and noticed the porcupine cookies the father made for his little friend. These look good CC.

I’ve always been afraid of the pressure cooker. I don’t know why.
I’ll try them in a crock pot.

This looks delightful! Interesting note - if you wrap that mixture in a cabbage leaf and pour the tomato soup on top, it’s my world-famous cabbage rolls!

I had never thought of making this recipe into large burgers. I use this recipe to make smaller meatballs quite a bit. Family favorite. I’ll have to give the pressure cooker method a whirl.

I haven’t made these in a while…never used a pressure cooker though. We just make them into burgers and fry them up in a pan. hence…”Porcupine Burgers” My kiddos LOVE them!
