Porcupine Burger Recipe

I mentioned tonight on Twitter that I was making “porcupine burgers” for dinner and got more then one curious response and several requests for the recipe so I figured I’d post it here. This was a Chapman staple growing up. It was cheap, one pot and easy to make and have left overs from. Grab a pressure cooker and give it a try.

Chapman Porcupine Burgers (8 servings)

  • Porcupine Burgers2 lbs Ground Beef
  • 1 cup Uncooked White Rice
  • 2 T Minced Onions
  • 2 T Salt
  • 1/2 T Black Pepper
  • 2 10 1/2 oz. cans Tomato Soup
  • 1 1/4 Cup Water

Instructions:

  • Combine meat, rice, onion, salt & pepper in a bowl and mix with hands
  • Form into balls (ours end up about the size of a tangerine)
  • Mix soup + water in a pressure cooker
  • Place meat balls in the cooker
  • Cover and cook on high until the control starts to jiggle
  • Reduce heat and cook for 10 minutes
  • Remove from heat and let stand for 5 minutes, then remove pressure in the sink with cold water.
  • Cut meatballs in to pieces on top of a peace of plain white bread and cover with sauce
  • Enjoy!

    Porcupines abound. I watched “Tortilla Soup” and noticed the porcupine cookies the father made for his little friend. These look good CC.

    This looks delightful! Interesting note – if you wrap that mixture in a cabbage leaf and pour the tomato soup on top, it’s my world-famous cabbage rolls! :-)

    I had never thought of making this recipe into large burgers. I use this recipe to make smaller meatballs quite a bit. Family favorite. I’ll have to give the pressure cooker method a whirl.

    I haven’t made these in a while…never used a pressure cooker though. We just make them into burgers and fry them up in a pan. hence…”Porcupine Burgers” My kiddos LOVE them!
